Ingredients
Servings : 4-6 dishes.
- 2 pounds apples, peeled, cored and sliced
- 1/2 cup solid coconut oil
- 1/2 cup raw sugar
- 1/2 cup applesauce
- 1/4 cup soy milk
- 2 teaspoons baking powder
- 1 cup whole wheat flour
- 1/2 cup all purpose flour
- 1 pinch of salt
- 1 teaspoon cinnamon
Method
- In a bowl, mix the coconut oil with the sugar until creamy then stir in the applesauce and soy milk
- Add the flours, salt and baking powder, then spoon the batter into a 9-inch baking pan, greased or lined with baking paper
- Top the batter with apple slices and sprinkle with cinnamon
- Bake in a preheated oven at 375F for 30-40 minutes
- Let it cool in the pan before serving
