For the vinaigrette
- 3 tablespoons extra-virgin olive oil
- 11/2 tablespoons lemon juice
- 1 heaped tablespoon Dijon mustard
- 1/4 cup diced red onion
- 11/2 tablespoons white wine vinegar
- 1 teaspoon red pepper flakes
- sea salt and coarsely ground pepper
For the salad
- 1 head butter lettuce, roughly chopped
- 2 cups spinach leaves
- 1 cup arugula
- 2 medium ripe avocados, pitted and diced
- 1 cup frozen shelled edamame, thawed
Method
- Combine all of the vinaigrette ingredients in a high-powered blender and blend until smooth
- Season to taste with salt and pepper
- Combine the salad ingredients in a large bowl (except :For the diced avocado)
- Drizzle the vinaigrette over the salad and gently toss using a spatula, tongs, or your hands
- Scatter the diced avocado over the top
