Boiled Corned Beef Dinner

Ingredients

Serving Size : 6

  • 3 1/2 Pounds Corned Beef Brisket
  • 2 Cups Carrots – cut in 1-inch pieces
  • 1 Cup Celery – cut 1/2 inch pieces
  • 1 Cup Onions – thinly sliced
  • 1 Cup Barley – regular
  • 1 Bay Leaf
  • 1/2 Teaspoon Garlic Powder

Method

  1. Place corned beef brisket in large Dutch oven or saucepot.
  2. Add enough water to cover meat.
  3. Cover; bring to a boil.
  4. Reduce heat.
  5. Simmer, covered, about 2 hours.
  6. Skim fat from liquid in Dutch oven.
  7. Add vegetables, barley and seasoning.
  8. Cover, bring to a boil.
  9. Reduce heat.
  10. Simmer 1 hour or until meat and barley are tender.
  11. Remove meat to serving platter.
  12. Drain vegetable-barley mixture; serve with corned beef brisket.
