Pulled Chicken Mole

For the mole sauce
- 1/2 tablespoon olive oil
- 1 tablespoon minced garlic
- 1/2 cup chopped onion
- 1 (28-ounce) can crushed tomatoes
- 3 tablespoons tomato paste
- 3 tablespoons cacao powder or 60%+ dark chocolate powder
- 1 tablespoon melted raw honey
- 1 (5-ounce) can chopped or diced chipotle in adobo sauce
- 1/2 tablespoon ground chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 11/2 pounds (five 5-ounce) boneless, skinless chicken breasts
- sea salt and black pepper
- garnish: fresh cilantro, sliced jalapeno
Method
- To a nonstick skillet over medium-high heat, add the olive oil, garlic, and onions
- Cook the onion for 3 to 5 minutes, or until translucent and beginning to brown, being careful not to burn the garlic
- Add to the slow cooker
- Add the tomatoes, tomato paste, cacao powder, honey, chipotle, chili powder, cumin, coriander, and cinnamon to the slow cooker and mix everything together until smooth
- Season to taste with salt and pepper, but keep in mind that it will take time :For the flavors to meld together
- Nestle the chicken breasts in the sauce, then cover and cook on high for 4 to 6 hours or on low for 6 to 8 hours
- When the cycle is nearly 80 percent complete, remove the chicken breasts from the slow cooker and place them in a bowl
- Pull apart the chicken using two forks, then place it back into the slow cooker
- Stir everything together and allow it to cook :For the remaining time
- Mix everything together one last time, then season to taste with sea salt and pepper
- Allow the dish to cool slightly to allow the sauce to thicken
- Garnish and enjoy!
