Spinach Coconut Lentil Soup Indian
Ingredients
- Serves: 6
- 4 cups fresh spinach, chopped
- 14 oz coconut milk
- 4 cups vegetable stock
- 1 1/2 cup red lentils, rinsed and drained
- 1 tsp ground cinnamon
- 1/2 tsp garam masala
- 1 tsp ground turmeric
- 1 tsp ground coriander seed
- 1 tsp ground cumin
- 2 tsp garlic, minced
- 1 large onion, chopped
- 1 tbsp vegetable oil
- pepper.
- salt.
Method
- Heat oil in the pan over medium heat.
- Add onion to the pan and saute for 5 minutes or until golden brown.
- Add cinnamon, garam masala, turmeric, coriander, cumin, and garlic and cook for 2 minutes.
- Transfer onion-spice mixture into the slow cooker.
- Add lentils and stock into the slow cooker and stir well.
- Cover and cook on low for 4 hours.
- Add coconut milk and spinach.
- Stir well and cook for another 30 minutes.
- Season with pepper and salt.
- Serve and enjoy.
