Ziti With Garlic And Sundried Tomatoes Recipe

Ingredients

  • Serving Size : 4
  • 3/4 pound ziti
  • 1 cup tomato sauce
  • 4 cloves garlic – minced
  • 2 tablespoons diced sundried tomatoes (not the oil marinated ones – the dry ones)
  • 1 tablespoon dried chiles (or to taste)
  • 1 tablespoon red wine
  • 1/2 cup fat free alpine lace mozzarella
  • 1 cilantro pesto (recipe follows)

Method

  1. Put up water for pasta, add pasta when ready.
  2. In the meantime: Saute garlic in wine until soft.
  3. Add chiles, saute until fragrant.
  4. Add tomato sauce and tomatoes.
  5. Simmer until the pasta is done.
  6. It will reduce to about 3/4 cup
  7. When the pasta is done, drain, return to pot, add sauce and cheese and toss.
  8. Top with about 1 T pesto.
  9. Cilantro “Pesto”: Process 2 cloves of garlic in food processor.
  10. Add 1 cup cleaned cilantro leaves.
  11. Puree to a fine paste.
  12. Serves 4 – serve with some nice bread and spinach, lettuce and red pepper salad.
