Ingredients
Makes 4 servings
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 medium carrot, finely chopped
- 1 medium yellow bell pepper, chopped
- 3 garlic cloves, minced
- 2 tablespoons tomato paste 1/2 cup dry red wine
- 1/2 teaspoon dried oregano
- 1 (28-ounce) can diced tomatoes, drained
- 1/4 teaspoon crushed red pepper
- salt and freshly ground black pepper
- 1 pound ziti
- 1/4 cup minced fresh parsley, for garnish
Method
- In a large skillet, heat the oil over medium heat
- Add the onion, carrot, bell pepper and garlic
- Cover and cook until soft, about 10 minutes
- Uncover and stir in the tomato paste, wine and oregano
- Add the tomatoes, crushed red pepper and salt and black pepper to taste
- Simmer for 20 minutes, uncovered, stirring occasionally
- In a large pot of boiling salted water, cook the ziti over medium-high heat, stirring occasionally, until al dente, about 10 minutes
- Drain well and transfer to a large serving bowl
- Add the sauce and toss gently to combine
- Sprinkle with parsley and serve immediately
