Zaatar Roasted Red Pepper Spread Recipe

Ingredients

Makes about 1 1/2 cups

  • 2/3 cup toasted walnuts
  • 2 jarred roasted red peppers (or see Roasted Red Pepper Hummus)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon zaatar spice blend
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cayenne
  • chopped fresh parsley, for garnish

Method

  1. In a food processor, process the walnuts until finely ground
  2. Add the red peppers and lemon juice and process until smooth
  3. Add the oil, zaatar, salt and cayenne and blend until smooth
  4. Taste, adjusting seasonings if necessary
  5. Transfer the spread to a small bowl and garnish with the parsley
  6. If not using right away, cover and refrigerate until needed
  7. Properly stored, it will keep for up to 3 days
