Yankee Banana Bread Recipe

Ingredients

  • Serving Size : 1
  • 2 cups unsifted whole wheat flour
  • 1 cup yellow corn meal
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup mashed ripe bananas
  • 1 cup buttermilk
  • 3/4 cup molasses
  • 3/4 cup snipped pitted dates

Method

  1. In large bowl, mix flour, corn meal, salt and baking soda.
  2. Stir in bananas and remaining ingredients.
  3. Turn into 3 greased and floured cans (1 Lb each)
  4. Bake in 350 degree oven 45 minutes, or until cake tester inserted in center of breads comes out clean.
  5. Cool 10 minutes, turn out of cans and serve warm with butter.
  6. Loaves may be frozen.
  7. Thaw, wrap in foil and heat in 3350 degree oven 20 minutes.
