Wrinkled Potatoes Canary Island-Style Spanish Recipe

Ingredients

  • 2 pounds baby potatoes
  • 1 cup salt, plus more as needed
  • mojo rojo or mojo verde, for dipping

Method

  1. Put the potatoes in a medium deep pot
  2. Cover with water and add 1 cup of salt
  3. You need enough salt in the water to cause the potatoes to float, so add more if needed
  4. Bring to a boil over high heat, then reduce the heat to a simmer and cook the potatoes for 25 to 30 minutes
  5. Use a toothpick to check for doneness
  6. The potatoes will start to wrinkle as they get tender
  7. Pour out most of the water, leaving just enough to cover the bottom of the pot, and return the pot to the stovetop
  8. Shake the pot over the low heat until the salt covering the potatoes begins to crystallize, about 5 minutes
  9. Take the potatoes off the heat and cover with a clean kitchen towel until the potato skins have wrinkled, about 10 minutes
  10. Serve the potatoes with mojo sauces
