Teriyaki Tofu Wraps
Ingredients
Makes 4 wraps
- 3 tablespoons soy sauce
- 1 tablespoon fresh lemon juice
- 1 tablespoon sugar
- 1 garlic clove, minced
- 2 tablespoons toasted sesame oil
- 1/4 teaspoon ground cayenne
- 1 pound extra-firm tofu, drained, patted dry and cut into 1/2-inch strips
- 2 tablespoons olive oil
- 1 large red bell pepper, cut into 1/4-inch strips
- 4 (10-inch) flour tortillas or lavash flatbread, warmed
Method
- In a small bowl, combine the soy sauce, lemon juice, sugar, garlic, sesame oil and cayenne and set aside
- Place the tofu in a shallow bowl
- Pour the teriyaki marinade over the tofu, turning gently to coat
- In a large skillet, heat the oil over medium heat
- Remove the tofu from the marinade, reserving the marinade
- Place the tofu in the hot skillet along with the bell pepper and cook until the tofu is browned and the peppers are tender, about 10 minutes
- Pour the reserved marinade over the tofu and peppers and simmer, stirring gently to coat
- To assemble wraps, place 1 tortilla on a work surface and place some of the tofu and pepper strips across the lower third
- Roll up tightly
- Repeat with remaining ingredients and serve
