Teriyaki Tofu Wraps

Teriyaki Tofu Wraps

Ingredients

Makes 4 wraps

  • 3 tablespoons soy sauce
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon sugar
  • 1 garlic clove, minced
  • 2 tablespoons toasted sesame oil
  • 1/4 teaspoon ground cayenne
  • 1 pound extra-firm tofu, drained, patted dry and cut into 1/2-inch strips
  • 2 tablespoons olive oil
  • 1 large red bell pepper, cut into 1/4-inch strips
  • 4 (10-inch) flour tortillas or lavash flatbread, warmed

Method

  1. In a small bowl, combine the soy sauce, lemon juice, sugar, garlic, sesame oil and cayenne and set aside
  2. Place the tofu in a shallow bowl
  3. Pour the teriyaki marinade over the tofu, turning gently to coat
  4. In a large skillet, heat the oil over medium heat
  5. Remove the tofu from the marinade, reserving the marinade
  6. Place the tofu in the hot skillet along with the bell pepper and cook until the tofu is browned and the peppers are tender, about 10 minutes
  7. Pour the reserved marinade over the tofu and peppers and simmer, stirring gently to coat
  8. To assemble wraps, place 1 tortilla on a work surface and place some of the tofu and pepper strips across the lower third
  9. Roll up tightly
  10. Repeat with remaining ingredients and serve
