Ingredients
Makes about 3 cups
- 2 (14.5-ounce) cans fire-roasted or plain diced tomatoes in juice, well drained
- 1 medium white onion, finely chopped
- 2 cloves garlic, finely chopped
- ½ cup chopped fresh cilantro
- juice of 2 limes.
- grated zest of 1 lime.
- salt to taste.
- 1 to 2 jalapeno or serrano peppers, to taste, seeded and finely chopped
Method
- In a medium bowl, combine all the ingredients
- Cover and refrigerate for a couple of hours to allow the flavors to develop
