Whole Wheat Sesame Crackers Recipe

Ingredients

Makes about 3 dozen crackers

  • 1 1/4 cups whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/4 cup plus 2 tablespoons sesame seeds
  • 1 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/3 cup vegan margarine
  • 1/3 cup water

Method

  1. Preheat the oven to 375°F
  2. Lightly oil a baking sheet or line with parchment paper and set aside
  3. In a food processor, combine both of the flours, 1/4 cup of the sesame seeds, salt and pepper, pulsing to blend
  4. Add the margarine and pulse to blend
  5. With the machine running, slowly add just enough of the water to form a dough
  6. Turn the dough out onto a lightly floured work surface and roll out until very thin (1/4 inch or less)
  7. Sprinkle with the remaining 2 tablespoons sesame seeds, rolling gently with the rolling pin to press the seeds into the dough
  8. Use a floured cookie cutter or pastry wheel to cut the dough into desired cracker shapes
  9. Arrange the crackers on the prepared baking sheet and bake until crisp and golden brown, 12 to 15 minutes
  10. If you didnt use parchment paper, loosen the crackers from the baking sheet with a metal spatulas soon as they come out of the oven to keep them from crumbling
  11. Cool on wire racks for 5 minutes
  12. If not using right away, let crackers cool completely on wire racks before storing in a dry place in a tightly closed container, where they will keep for 2 to 3 days
