Ingredients
Makes 1 loaf
- 3 tablespoons dark molasses
- 1 package active dry yeast (21/4 teaspoons)
- 1 1/2 cup warm plain soy milk
- 2 cups whole wheat flour
- 2 cups all-purpose flour
- 1 1/4 teaspoons salt
- 1 teaspoon ground cinnamon
- 1 cup regular or golden raisins
Method
- In a small bowl, combine the molasses and yeast
- Add 1/4 cup of the soy milk and stir until yeast is dissolved
- Set it aside for 5 minutes
- In a large bowl, combine the wheat flour, all-purpose flour, salt, cinnamon and raisins
- Add the yeast mixture and the remaining 1 1/4 cups soy milk, stirring to form a soft dough
- Knead the dough for 5 minutes, then place it in a lightly oiled bowl, turning the dough to coat with oil
- Cover with plastic wrap or a clean dish towel and let rise in a warm place until doubled in size, about 1 hour
- Test dough by poking it with your finger
- Its ready if the indentation from your finger remains
- Lightly oil a 9-inch loaf pan and set it aside
- Punch the dough down and turn it out onto a lightly floured surface
- Shape the dough into a loaf and place it in the prepared pan
- Cover with plastic wrap or a clean tea towel and let rise in a warm place for 1 hour
- Preheat the oven to 350°F
- Uncover the dough and bake for 45 minutes, or until the top is golden-brown
- During the last 20 minutes of baking time, cover loosely with foil
- Remove the loaf from the oven and set aside to cool for 5 minutes, then turn out onto a wire rack to cool for 30 minutes before slicing
