White Wild Rice Salad Walnuts Cranberries Figs Recipe

Ingredients

Makes 4 servings

  • 2 cups cooled cooked wild rice
  • 3 cups cooled cooked basmati or other long-grain white rice
  • 1 cup frozen baby peas, thawed
  • 1/2 cup chopped toasted walnuts
  • 1/2 cup sweetened dried cranberries
  • 4 fresh ripe figs, finely chopped
  • 2 green onions, finely minced
  • 1/4 cup cranberry juice
  • 1/4 cup olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 1/2 teaspoon sugar
  • salt and freshly ground black pepper

Method

  1. In a large bowl combine the wild rice, basmati rice, peas, walnuts, cranberries, figs and green onions
  2. In a small bowl, combine the cranberry juice, olive oil, balsamic vinegar and sugar and pour over the rice mixture
  3. Season with salt and pepper to taste and toss well to combine
  4. Set aside for
  5. 30 minutes before serving or cover and refrigerate until ready to serve
  6. Serve at room temperature
