Ingredients
CRUST:
- 1 (9-oz.) package chocolate wafer cookies, finely ground
- 1/2 (4-oz.) semisweet chocolate baking bar, chopped
- 1/2 cup butter, melted
- 1/3 cup sugar
FILLING:
- 1 (6-oz.) package white chocolate baking squares, chopped
- 1/4 cup whipping cream
- 2 (8-oz.) packages cream cheese, softened
- 2 tablespoons all-purpose flour
- 1/3 cup sugar
- 4 large eggs
- 1/2 cup chopped, sweetened dried cranberries
- 1/2 (4-oz.) semisweet chocolate baking bar, finely chopped
- 1/4 cup amaretto liqueur
TOPPING
- 1 (12-oz.) package fresh cranberries
- 1 cup sugar
- 1/2 cup seedless raspberry jam
- 1/4 cup water
Method
- Preheat oven to 350F
- In a large bowl, combine crushed cookies, chocolate, butter and sugar
- Press into the bottom and up the sides of a 9 inch springform pan
- Bake for 10 minutes
- Reduce heat to 325F
- Melt white chocolate with whipping cream in a saucepan or in the microwave
- In a large mixing bowl, beat cream cheese, flour and sugar until smooth
- Add in eggs, one at a time, until just combined
- Stir in cranberries, chocolate, amaretto liqueur and whipping cream mixture
- Pour batter into crust
- Bake for 30 to 35 minutes, until center is just set
- Cool, cover and refrigerate overnight
- For topping, bring water, cranberries and sugar to a boil in a medium saucepan
- Boil for 8 minutes, stirring often, until sauce thickens
- Remove from heat and stir in jam
- Cool, cover and chill overnight
- Top cheesecake to prepare
- Garnish suggestion – fresh mint leaves
