Ingredients
SERVES 8
- 2 to 3 cups pressure-cooked wheat berries, at room temperature
WALDORF DRESSING
- 1 cup plain yogurt (not Greek)
- 1 cup mayonnaise or Vegenaise
- 1/3 cup sour cream
- ¼ cup orange or tangerine juice
SALAD
- 2 large Fuji or Granny Smith apples, cored and chopped
- 2 Honeycrisp or Braeburn apples, cored and chopped
- juice of 1 lemon
- 3 ribs celery, chopped
- 1 cup red or green seedless grapes, halved, or pomegranate seeds
- ½ cup slivered blanched almonds
- ½ cup dried tart cherries
Method
- In a small bowl, whisk the dressing ingredients together until smooth
- In a large serving bowl, combine the wheat berries and apples, then add the lemon juice and toss
- Add the celery, grapes, almonds, and cherries and toss with just enough of the dressing to lightly coat all the salad ingredients; you might not use all the dressing
- Store in the refrigerator, covered, 30 minutes to 2 hours, to let the flavors meld
- Serve the salad chilled
