Warm Mexican Bean Dip With Tortilla Chips Recipe

Ingredients

  • 1 onion, chopped
  • 1 tbsp olive oil
  • 1 tsp soft brown sugar
  • 1 tsp wine vinegar
  • 1 tsp cajun seasoning
  • 400g tin mixed beans, rinsed and drained
  • 400g tin chopped tomatoes, with garlic
  • handful grated cheddar
  • 100g tortilla chips
  • serve with chopped avocado (optional)

Method

  1. In olive oil, Fry the chopped onion until soft
  2. Add soft brown sugar, Cajun seasoning and wine vinegar
  3. Cook for one min then add the mixed beans and chopped tomatoes with garlic
  4. Simmer for twelve to fifteen mins until the sauce has thickened then season
  5. Scatter handful grated cheddar onto tortilla chips
  6. Microwave on High for one min until cheese has melted
  7. Serve alongside the dip
  8. Make ahead and reheat dip before guests arrive
  9. Top with some chopped avocado if you like
