Warm Fudge Cheesecake Recipe

Ingredients

  • 1/2 cup butter, softened
  • 1 1/2 plus 1/3 cup sugar, divided
  • 1 cup all-purpose flour
  • 1 tablespoon vanilla, divided
  • 2/3 cup chopped pistachios
  • 4 (8-ounce) packages cream cheese, softened
  • 4 large eggs
  • 1 (12-ounce) package semisweet chocolate chips

Method

  1. Preheat oven to 350F
  2. In a large mixing bowl, beat butter, 1/3 cup sugar and flour until well blended
  3. Stir in 1 teaspoon vanilla and pistachios
  4. Press into the bottom and 1 ½ inches up the sides of a 9 inch springform pan
  5. Bake 12 to 15 minutes until golden
  6. Cool
  7. In a separate mixing bowl, beat cream cheese until smooth
  8. Add in remaining sugar and eggs, one at a time until just combined
  9. Stir in remaining vanilla
  10. Pour half of batter into crust
  11. Sprinkle chocolate chips on top and evenly cover with remaining batter
  12. Bake for 60 minutes, until set
  13. Cool until just warm, and serve with whipped topping and chocolate shavings
