Ingredients
Makes about 3 dozen crackers
- 1¾ cups old-fashioned oats
- 2/3 cup chopped walnut pieces
- 1/4 cup all-purpose flour
- 1 teaspoon baking powder
- ¾ teaspoon salt
- pinch freshly ground black pepper pinch sugar
- 1/4 cup cold vegan margarine, cut into small pieces
- 1/4 cup plain soy milk
Method
- Preheat the oven to 375°F
- Lightly oil a baking sheet or line it with a sheet of parchment paper and set it aside
- Place the oats and walnuts in a food processor and process until finely ground
- Add the flour, baking powder, salt, pepper and sugar; pulse to combine
- Add the margarine and pulse until the mixture resembles coarse crumbs
- With the machine running, add enough of the soy milk until a dough forms
- Turn the dough out onto a lightly floured surface, roll out dough to 1/8 inch thick
- Use a cookie cutter or pastry wheel to cut into 2-inch circles, squares, or other shape
- Arrange the crackers on the prepared baking sheet about 1/2 inch apart and bake until lightly browned on the bottom, 12 to 15 minutes
- If you didnt use parchment paper, loosen the crackers from the baking sheet with a metal spatulas soon as they come out of the oven to keep them from crumbling
- Cool on wire racks for 5 minutes
- If not using right away, let crackers cool completely on wire racks before storing in a dry place in a tightly closed container, where they will keep for 2 to 3 days
