Walnut And Cranberry-Stuffed Sweet Potatoes Recipe

Ingredients

Makes 4 servings

  • 4 large sweet potatoes, unpeeled
  • 1 tablespoon olive oil
  • 1/2 cup minced red onion
  • 1/2 cup chopped walnuts
  • 1/2 cup sweetened dried cranberries
  • 1 tablespoon vegan margarine
  • 1 tablespoon pure maple syrup
  • salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 teaspoons walnut oil (optional)

Method

  1. Preheat the oven to 425°F
  2. Lightly oil a baking sheet and set aside
  3. Pierce the potatoes with a fork and bake until soft, about 1 hour
  4. When cool enough to handle, cut the potatoes in half lengthwise and, leaving the shells and 1/4-inch-wide perimeter of the flesh intact, scoop out the middle of the potatoes and place them in a bowl
  5. Mash well and set aside
  6. In a large skillet, heat the oil over medium heat
  7. Add the onion, cover and cook until softened, about 5 minutes
  8. Stir in the walnuts, cranberries and margarine
  9. Add the mixture to the mashed sweet potatoes
  10. Add the maple syrup and season with salt and pepper to taste
  11. Mix well to combine
  12. Fill the potato shells with the filling and arrange on a baking sheet
  13. Bake until the potatoes are heated through, about 15 minutes
  14. Drizzle each potato with a little walnut oil, if using
  15. Serve immediately
