Vermont Baked Beans Recipe

Ingredients

  • 1 lb. navy or pea beans
  • 2 tbsp. dry mustard
  • 1 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 3/4 cup maple syrup
  • 2 tbsp. molasses
  • 1/4 lb. salt pork
  • 1 large onion

Method

  1. Soak beans overnight
  2. Heat beans in their soaking water until boiling
  3. Lower the heat; cover, and simmer until tender
  4. Drain, reserving the water
  5. Place the beans in a crock pot
  6. Combine all other ingredients EXCEPT the onion and salt pork
  7. Pour over beans
  8. Add salt pork, onion, and reserved water
  9. You may add more water if necessary during cooking time
  10. Cook on in electric crockpot at high for approximately 2 hours
  11. Stir occasionally
