Ingredients
- 226 g sliced zucchini
- cherry tomatoes, cut in half
- ½ cup (75 g) sliced green bell pepper
- ½ cup (75 g) sliced red bell pepper
- ¾ cup (120 g) sliced onion
- 115g sliced mushrooms
- 2 tsps minced garlic
- 1 tbsp (15 ml) olive oil
- 1 tbsp (6 g) Italian seasoning
- 225g no-salt-added tomato sauce
Method
- Combine all ingredients in slow cooker
- Cook on low 6 hours or until vegetables are tender
- Yield: 6 servings
- Per serving: 132 g water; 70 calories (32% from fat, 13% from protein, 55% from carb)
