Vegetables For Pasta Slow Cooker Recipe

Ingredients

  • 226 g sliced zucchini
  • cherry tomatoes, cut in half
  • ½ cup (75 g) sliced green bell pepper
  • ½ cup (75 g) sliced red bell pepper
  • ¾ cup (120 g) sliced onion
  • 115g sliced mushrooms
  • 2 tsps minced garlic
  • 1 tbsp (15 ml) olive oil
  • 1 tbsp (6 g) Italian seasoning
  • 225g no-salt-added tomato sauce

Method

  1. Combine all ingredients in slow cooker
  2. Cook on low 6 hours or until vegetables are tender
  3. Yield: 6 servings
  4. Per serving: 132 g water; 70 calories (32% from fat, 13% from protein, 55% from carb)
