Vegetable Quiche Recipe

Ingredients

  • Serving Size : 4
  • 2 1/2 cup cooked vegetables*
  • 4 ounce grated cheese
  • 4 ounce chopped onions
  • 1 cup evaporated skim milk
  • 4 tablespoon flour
  • 4 eggs**
  • 1 teaspoon baking powder
  • 1 teaspoon salt (optional)
  • 4 teaspoon vegetable oil
  • 1/2 teaspoon pepper

Method

  1. Can substitute Egg Beaters, etc.
  2. Dump vegetables, cheese, and onion in a 10″ pie pan sprayed with non-stick spray.
  3. Blend remaining ingredients in blender and pour over vegetables and cheese.
  4. Bake at 375 F for 20-30 minutes
  5. WW Exchange per serving: 2 protein (1 egg and 1 cheese), 1/2 milk, 1 fat, 30 optional calories.
  6. I usually use Egg Beaters and omit the vegetable oil.
  7. This will also freeze well.
