Ingredients
- ¾ cup (120 g) sliced onion
- 1 cup (100 g) celery, cut in 2-inch (5 cm) strips
- 1 cup (130 g) carrots, cut in 2-inch (5 cm) strips
- 1 cup (100 g) green beans
- ½ cup (75 g) diced green bell pepper
- 1 large tomato, sliced
- ¼ cup (55 g) unsalted butter
- 1/8 teaspoon black pepper
- 1 tbsp (13 g) sugar
- 2 tbsps (25 g) tapioca
Method
- Mix ingredients and place in slow cooker
- Cook on low for 3 to 4 hours
- Yield: 6 servings
- Per serving: 107 g water; 126 calories (54% from fat, 4% from protein, 42% from carb)
