Vegan Trail Mix Recipe

Ingredients

Makes about 3 cups

  • 1/2 cup unsweetened flaked coconut
  • 1/2 cup unsalted roasted cashews
  • 1/2 cup slivered blanched almonds
  • 1/2 cup vegan semisweet chocolate chips
  • 1/2 cup sweetened dried cranberries
  • 1/3 cup chopped dried pineapple
  • 1/4 cup unsalted roasted sunflower seeds

Method

  1. In a small skillet, toast the coconut over medium heat, stirring, until lightly browned, 2 to 3minutes
  2. Set aside to cool
  3. In a large bowl, combine the cashews, almonds, chocolate chips, cranberries, pineapple and sunflower seeds
  4. Stir in the toasted coconut
  5. Cool completely before serving
  6. This is best when served on the same day that it is made
