Ingredients
- 2 (12 ounce) packages extra firm tofu, drained and cubed
- 1 cup white sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup vegetable oil
- 2 tablespoons lemon juice
- 1 (9 inch) prepared graham cracker crust
Method
- Preheat oven to 350F
- In a food processor, combine tofu, sugar, vanilla, salt, vegetable oil and lemon juice
- Process until smooth and creamy
- Pour into crust
- Bake 30 to 40 minutes, until slightly golden
- Cool, cover and chill overnight
- Garnish suggestion – fresh strawberry slices
