Vegan Tofu Cheesecake Recipe

Ingredients

  • 2 (12 ounce) packages extra firm tofu, drained and cubed
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 2 tablespoons lemon juice
  • 1 (9 inch) prepared graham cracker crust

Method

  1. Preheat oven to 350F
  2. In a food processor, combine tofu, sugar, vanilla, salt, vegetable oil and lemon juice
  3. Process until smooth and creamy
  4. Pour into crust
  5. Bake 30 to 40 minutes, until slightly golden
  6. Cool, cover and chill overnight
  7. Garnish suggestion – fresh strawberry slices
