Vegan Soy-Tan Cutlets Recipe

Ingredients

Makes 6 servings

  • 6 ounces firm tofu, drained and crumbled
  • 3 tablespoons soy sauce
  • 1/4 teaspoon sweet paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon freshly ground black pepper
  • ¾ cup wheat gluten flour (vital wheat gluten)
  • 2 tablespoons olive oil

Method

  1. In a food processor, combine the tofu, soy sauce, paprika, onion powder, garlic powder, pepper and flour
  2. Process until well mixed
  3. Transfer the mixture to a flat work surface and shape into a cylinder
  4. Divide the mixture into 6 equal pieces and flatten them into very thin cutlets, no more than 1/4-inch thick
  5. (To do this, place each cutlet between two pieces of waxed paper, film wrap, or parchment paper and roll flat with a rolling pin
  6. In a large skillet, heat the oil over medium heat
  7. Add the cutlets, in batches if necessary, cover and cook until nicely browned on both sides, 5 to 6 minutes per side
  8. The cutlets are now ready to use in recipes or serve immediately, topped with a sauce
