Tofu Sour Cream
Ingredients
Makes about 1 1/2 cups
- 1 cup silken tofu, well drained
- 2 tablespoons fresh lemon juice
- 2 teaspoons canola or grapeseed oil
- 2 teaspoons cashew butter or tahini (sesame paste)
- 1/4 teaspoon yellow mustard
- 1/2 teaspoon salt
Method
- In a blender or food processor, combine all the ingredients and process until smooth
- Scrape the mixture into a container with a tight-fitting lid, cover and refrigerate until needed
- Properly stored, it will keep for 3 to 4 days
