Ingredients
Makes 8 servings
- 2 cups all-purpose flour
- 1 1/4 cups sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup drained soft tofu
- 1/2 cup plain or vanilla soy milk
- 1/4 cup canola or other neutral oil
- 2 teaspoons pure vanilla extract
Method
- Preheat the oven to 350°F
- Grease an 8-inch loaf pan and set aside
- In a large bowl, mix the flour, sugar, baking powder and salt
- Set aside
- In a blender or food processor, combine the tofu, soy milk, oil and vanilla
- Blend until smooth, then pour the wet ingredients into the dry ingredients and stir together until just combined
- Do not overmix
- Scrape the batter into the prepared pan
- Bake until the cake is golden and a toothpick inserted in the center comes out clean, about 40 minutes
- Let the cake cool in the pan for 10 minutes before removing from the pan to a wire rack to cool completely before slicing
