Ingredients
Makes 4 to 6 servings
- 1 1/2 pounds small white potatoes, unpeeled
- 2 celery ribs, cut into 1/4-inch slices
- 1/4 cup sweet pickle relish
- 3 tablespoons minced green onions
- 1/2 to ¾ cup vegan mayonnaise
- 1 tablespoon soy milk
- 1 tablespoon tarragon vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- freshly ground black pepper
Method
- In a large pot of salted boiling water, cook the potatoes until just tender, about 30 minutes
- Drain and set aside to cool
- When cool enough to handle, peel the potatoes and cut them into 1-inch dice
- Transfer the potatoes to a large bowl and add the celery, pickle relish and green onions
- Set aside
- In a small bowl, combine the mayonnaise, soy milk, vinegar, mustard, salt and pepper to taste
- Mix until well blended
- Pour the dressing onto the potato mixture, toss gently to combine and serve
