Vegan Pomegranate Cheesecake With Glazed Pecans Recipe
Ingredients
Makes 8 servings
- 1 1/4 cups vegan vanilla cookie crumbs
- 1/4 cup ground walnuts
- 1/4 cup vegan margarine, melted
- 3 (8-ounce) containers vegan cream cheese, at room temperature
- 1 cup sugar
- 2 tablespoons Pomegranate Molasses
- 2 tablespoons pomegranate juice
- 1 tablespoon cornstarch
- 1 cup glazed pecans
Method
- Preheat the oven to 350°F
- Grease a 9-inch springform pan
- Place the crumbs and the ground walnuts in the bottom of the pan, add the margarine and mix with a fork to blend
- Press crumb mixture into bottom and sides of pan and set aside
- In a food processor, combine the cream cheese, sugar, pomegranate molasses, pomegranate juice and cornstarch and blend until smooth
- Pour the filling into the prepared crust and bake for 45 minutes
- Turn off oven and leave the cheesecake in the oven for another 10 minutes
- When done, edges should be golden and starting to pull away from sides of pan and center should be soft set
- Remove from the oven and cool at room temperature for 1 hour
- Arrange glazed pecan halves on the top outer edge of the cheesecake
- Refrigerate at least 4 hours before serving
- Keep refrigerated
