Ingredients
Makes 2 cups
- 1 pound firm tofu, drained
- 1 1/2 tablespoons fresh lemon juice
- 1 1/2 tablespoons apple cider vinegar
- 2 teaspoons canola or grapeseed oil
- 1 teaspoon salt
Method
- Steam the tofu for 5 minutes
- Set aside to cool
- Transfer half of the tofu to a blender or food processor
- Add the lemon juice, vinegar, oil and salt and process until smooth
- In a large bowl, mash the remaining steamed tofu with a fork until crumbly
- Add the pureed tofu mixture and stir to combine
- Cover and chill for at least 1 hour before using
