Ingredients
Makes 8 servings
- 2 1/2 cups pitted cherries
- 1 cup vegan vanilla yogurt
- ¾ cup plain or vanilla soy milk
- 1/2 cup sugar
- 2 tablespoons pure maple syrup or agave nectar
- 1 teaspoon pure vanilla extract
- pinch salt
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 2 tablespoons confectioners sugar
Method
- Preheat the oven to 375°F
- Grease a 10-inch quiche dish or pie plate
- Spread the cherries in the bottom of the prepared dish and set aside
- In a large bowl, combine the yogurt, soy milk, sugar, maple syrup, vanilla and salt and mix until smooth
- Beat in the flour and baking powder until combined
- Do not overmix
- Pour the batter over the cherries and bake until set, 40 to 45 minutes
- Cool on a wire rack for 20minutes
- Just before serving, sprinkle with the confectioners sugar
- Serve warm
