Vegan Cherry Clafoutis Recipe

Ingredients

Makes 8 servings

  • 2 1/2 cups pitted cherries
  • 1 cup vegan vanilla yogurt
  • ¾ cup plain or vanilla soy milk
  • 1/2 cup sugar
  • 2 tablespoons pure maple syrup or agave nectar
  • 1 teaspoon pure vanilla extract
  • pinch salt
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons confectioners sugar

Method

  1. Preheat the oven to 375°F
  2. Grease a 10-inch quiche dish or pie plate
  3. Spread the cherries in the bottom of the prepared dish and set aside
  4. In a large bowl, combine the yogurt, soy milk, sugar, maple syrup, vanilla and salt and mix until smooth
  5. Beat in the flour and baking powder until combined
  6. Do not overmix
  7. Pour the batter over the cherries and bake until set, 40 to 45 minutes
  8. Cool on a wire rack for 20minutes
  9. Just before serving, sprinkle with the confectioners sugar
  10. Serve warm
