Banana-Walnut Cake

Ingredients

Makes 8 servings

  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 ripe bananas
  • 1/2 cup plain or vanilla soy milk
  • 1/4 cup canola or other neutral oil
  • ¾ cup sugar
  • 2 teaspoons pure vanilla extract
  • 1/2 cup chopped walnuts

Method

  1. Preheat the oven to 350°F
  2. Grease an 8-inch square cake pan and set aside
  3. In a large bowl, sift together the flour, baking powder, allspice, cinnamon and salt and set aside
  4. In a food processor or blender, combine the bananas, soy milk, oil, sugar and vanilla and blend until smooth
  5. Add the wet ingredients to the dry ingredients and stir until just moistened
  6. Do not overmix
  7. Fold in the walnuts
  8. Scrape the batter into the prepared pan and bake until a toothpick inserted into the center comes out clean, 35 to 40 minutes
  9. Allow to cool in pan for 10 to 15 minutes before inverting it onto a wire rack to cool completely before slicing
