Vegan Bordelaise Sauce Recipe
Ingredients
Makes about 2 1/2 cups
- 1 tablespoon olive oil
- 1/4 cup minced shallots
- 1/2 cup chopped white mushrooms
- 1/2 cup dry red wine
- 1/2 teaspoon minced fresh thyme or 1/4 teaspoon dried
- 1/4 teaspoon freshly ground black pepper
- 2 cups Basic Brown Sauce
Method
- In a medium saucepan, heat the oil over medium heat
- Add the shallots and cook until softened, about 5 minutes
- Stir in the mushrooms and cook 1 minute
- Add the wine, thyme and pepper and simmer until the liquid is reduced by half
- Stir in the brown sauce and simmer until hot
- Serve immediately
- If not using right away, cool the sauce to room temperature, transfer to a container, cover and refrigerate until needed
- Properly stored, the sauce will keep for 2 to 3 days
- Reheat the sauce in a saucepan over low heat until hot
