Ingredients
Servings : 4-6 dishes.
- 3/4 cup brown rice flour
- 1/2 cup tapioca flour
- 1/2 cup almond meal
- 1/2 cup coconut flour
- 1 pinch of salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon xanthan gum
- 2/3 cup coconut milk
- 1 cup water
- 1/4 cup coconut oil
- 1/4 cup applesauce
- 1 tablespoon vanilla extract
- 1 teaspoon lemon juice
Method
- In a bowl, mix all the flours with the salt, baking powder, baking soda and xanthan gum
- In another bowl, combine the water with the coconut milk, coconut oil, applesauce, vanilla extract and lemon juice
- Pour it over the flour and mix until smooth
- Grease a 9-inch cake pan or line it with baking paper then pour the batter into the pan
- Bake in a preheated oven at 350F for 1 hour or until a skewer inserted in the middle of the cake comes out clean
- Let it cool in the pan before serving
