Ingredients
Makes about 2 dozen cookies
- 1/2 cup vegan margarine
- ¾ cup sugar
- 1 1/2 teaspoons pure vanilla extract
- 2 tablespoons water
- 2 cups all-purpose flour
- 1/2 cup ground toasted walnuts
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Method
- In a large bowl, beat together the margarine, sugar and water until well blended
- Add the flour, walnuts, baking powder and salt and stir well to form a smooth dough
- Preheat the oven to 350°F
- Pinch off small pieces of dough and roll them between your hands into balls
- Place the dough balls onto an ungreased baking sheet and press down to flatten to about 1/4 inch thick
- Bake until lightly browned at the edges, about 15 minutes
- Cool for 10 minutes on the baking sheet before removing to a wire rack to cool completely
- Store in an airtight container
