Ingredients
Servings : 16 muffins.
- 2½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 pinch salt
- ½ cup agave syrup
- 2 cups coconut milk
- ½ cup water
- 1 teaspoon vinegar
- 1 tablespoon vanilla extract
- ½ cup coconut oil
- 1 vanilla pod, split lengthwise
Method
- Mix the flour with the baking soda, baking powder and salt
- Set aside
- In a different bowl, combine the agave syrup with the coconut milk, water, vinegar, vanilla extract, coconut oil, and the seeds from the vanilla pod
- Pour this mixture over the dry ingredients and mix really well
- Spoon the batter into your muffin pans and bake in a preheated oven at 350°F for 20-30 minutes until the muffins turn slightly golden brown and fragrant
- Allow the muffins to cool in the pan before serving
