Turkey Mushroom Soup Slow Cooker Recipe

Ingredients

  • ½ pound (225 g) ground turkey
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ¼ cup (60 ml) egg substitute
  • 1 tbsp (15 ml) olive oil
  • 1 cup (130 g) sliced carrots
  • ½ teaspoon crushed garlic
  • 140 g sliced mushrooms
  • 475 ml low-salt beef broth
  • 10 ounces 280 g low-salt cream of mushroom soup 2
  • 2 tbsps (32 g) no-salt-added tomato paste

Method

  1. In a small bowl, mix together ground turkey, garlic powder, onion powder, and pepper
  2. Add egg substitute, stirring until well blended
  3. Form into small meatballs
  4. Heat olive oil in skillet
  5. Brown meatballs and drain well
  6. Transfer meatballs to slow cooker
  7. Add remaining ingredients
  8. Cover and cook on low 6 to 8 hours or on high 3 to 4 hours
  9. Yield: 8 servings
  10. Per serving: 148 g water; 108 calories (35% from fat, 42% from protein, 23% from carb)
