Ingredients
Makes about 3 dozen cookies
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1 cup vegan margarine
- 1 cup sugar
- 1 1/2 teaspoons egg replacer beaten into 2 tablespoons water
- 2 teaspoons pure vanilla extract
Method
- Preheat the oven to 300°F
- In a medium bowl, combine the flour and baking powder and mix well
- Set aside
- In a large bowl, beat together the margarine and sugar with an electric mixer until light and fluffy
- Add the egg replacer and vanilla and beat on medium until smooth
- Add the dry ingredients to the wet ingredients and beat on low until thoroughly combined
- The dough should be firm
- Scoop the dough, 1 tablespoon at a time and roll into balls
- Place the dough balls on ungreased baking sheets, about 1 inch apart
- Use a thumb or the back end of a 1/4 teaspoon measuring spoon to make an indentation in the center
- Place 1/4 teaspoon of jam in each indentation
- Bake until golden brown, 22 to 24 minutes
- Cool on the baking sheet for 5 minutes before removing to a wire rack to cool completely
- Store in an airtight container
