Tofu Waldorf Salad Wraps Recipe

Ingredients

Makes 4 wraps

  • 1 pound extra-firm tofu, drained, patted dry and cut in 1/2-inch dice
  • 2 firm crisp apples, such as Gala or Fuji, cored and chopped
  • 2 celery ribs, minced
  • 1/3 minced red onion
  • 1/3 cup chopped walnuts, toasted
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup vegan mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 (10-inch) flour tortillas or lavash flatbread
  • 4 lettuce leaves

Method

  1. In a large bowl, combine the tofu, apples, celery, onion, walnuts and parsley
  2. Add the mayonnaise, lemon juice, sugar, salt and pepper, stirring well to combine
  3. To assemble wraps, lay 1 tortilla on a work surface
  4. Spread about 1/2 cup of the tofu mixture across the tortilla and top with a lettuce leaf
  5. Roll up tightly and cut in half diagonally
  6. Repeat with the remaining ingredients and serve
