Ingredients
Makes 4 wraps
- 8 ounces extra-firm tofu, drained and patted dry
- 1/2 cup tahini (sesame paste)
- 3 green onions, minced
- 2 celery ribs, minced
- 1/2 cup minced fresh parsley
- 2 tablespoons capers
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/8 teaspoon ground cayenne
- 4 (10-inch) flour tortillas or lavash
- 1 medium carrot, shredded
- 4 lettuce leaves
Method
- In a food processor, combine the tofu, tahini, green onions, celery, parsley, capers, lemon juice, mustard, salt and cayenne and process until well combined
- To assemble wraps, place 1 tortilla on a work surface and spread about 1/2 cup of the tofu mixture across the tortilla
- Sprinkle with shredded carrot and top with a lettuce leaf
- Roll up tightly and cut in half diagonally
- Repeat with the remaining ingredients and serve
