Tofu Pizzaiola Recipe

Ingredients

Makes 4 servings

  • 2 tablespoons olive oil
  • 1 (16-ounce) package extra-firm tofu, drained, cut into 1/2-inch slices
  • salt
  • 4 garlic cloves, minced
  • 1 (14.5-ounce) can diced tomatoes, drained
  • 1/4 cup oil-packed sun-dried tomatoes, cut into 1/4-inch strips
  • 1/4 cup pitted kalamata olives, halved
  • 1 tablespoon capers
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sugar
  • freshly ground black pepper
  • 2 tablespoons minced fresh parsley, for garnish

Method

  1. Preheat the oven to 275°F
  2. In a large skillet, heat 1 tablespoon of the oil over medium heat
  3. Add the tofu and cook until golden brown on both sides, turning once, about 5 minutes per side
  4. Sprinkle the tofu with salt to taste
  5. Transfer the fried tofu to a heatproof platter and keep warm in the oven
  6. In the same skillet, heat the remaining 1 tablespoon oil over medium heat
  7. Add the garlic and cook until softened, about 1 minute
  8. Do not brown
  9. Stir in the diced tomatoes, sun-dried tomatoes, olives and capers
  10. Add the oregano, sugar and salt and pepper to taste
  11. Simmer until the sauce is hot and the flavors are well combined, about 10 minutes
  12. Top the fried tofu slices with the sauce and sprinkle with the parsley
  13. Serve immediately
