Tofu Loaf Recipe

Ingredients

  • Serving Size : 6
  • 1 tablespoon oil
  • 2 garlic cloves – diced
  • 1 onion – diced
  • 1 carrot – diced
  • 1 bell pepper – green or red diced
  • 1 celery stick – diced
  • 2 tablespoon tamari
  • 2 pound tofu – mashed
  • 4 slice – whole wheat bread
  • 1 tablespoon oil
  • 1 tablespoon tamari
  • 1/2 teaspoon garlic powder
  • 1 cup nutritional yeast*
  • 1/2 cup tahini
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon turmeric

Method

  1. Heat 1 tablespoon oil in a skillet.
  2. Add garlic, onion, pepper, carrot and celery.
  3. Season with 1 tablespoon tamari.
  4. When vegetables are tender, remove from the heat and place in a large bowl.
  5. Add mashed tofu.
  6. Cut bread into crouton sized pieces and quick fry in oil with tamari, garlic powder and five tablespoons of nutritional yeast.
  7. Add to tofu mixture.
  8. Season with remaining ingredients.
  9. Combine well and place the batter into a well greased casserole.
  10. Bake at 350F for 35 minutes.
  11. Allow to cool for 5 minutes or so, slide a butter knife around the edges, turn upside down on a plate.
  12. Serve warm with a simple green salad.
  13. It is also terrific in sandwiches cold.
  14. It keeps pretty well in the fridge for several days.
  15. Serves 4 to 6.
