Tiger Nut Milk Spanish Recipe

Ingredients

  • 2 cups chufa nuts (tiger nuts)
  • ½ cinnamon stick
  • 1 teaspoon grated lemon zest
  • ½ cup sugar
  • 1 quart flat mineral or filtered water

Method

  1. Soak the tiger nuts in water for 24 hours
  2. Drain the nuts and place them in a blender with the cinnamon stick, lemon zest, and sugar
  3. Add the water and blend until smooth
  4. Line a fine-mesh strainer with cheesecloth and strain the mixture into a bowl
  5. Squeeze the cheesecloth to release as much liquid as possible
  6. Discard the solids and chill the milk
  7. Stir well before pouring into cups
  8. Serve cold
