Tiger Nut Milk Spanish Recipe
Ingredients
- 2 cups chufa nuts (tiger nuts)
- ½ cinnamon stick
- 1 teaspoon grated lemon zest
- ½ cup sugar
- 1 quart flat mineral or filtered water
Method
- Soak the tiger nuts in water for 24 hours
- Drain the nuts and place them in a blender with the cinnamon stick, lemon zest, and sugar
- Add the water and blend until smooth
- Line a fine-mesh strainer with cheesecloth and strain the mixture into a bowl
- Squeeze the cheesecloth to release as much liquid as possible
- Discard the solids and chill the milk
- Stir well before pouring into cups
- Serve cold
