Ingredients
Makes 1 loaf
- 1 1/4 cups hot water
- 2 tablespoons pure maple syrup
- 2 tablespoons olive oil
- 1 1/4 teaspoons salt
- 1 package active dry yeast (21/4 teaspoons)
- 1 1/2 cups whole wheat flour
- 1 1/2 cups oat flour
- 1 cup yellow cornmeal
Method
- In a large bowl, combine the water, maple syrup, oil and salt
- Let cool until warm (not hot) and add the yeast
- Stir to combine, then set aside for 10 minutes
- In a separate large bowl, combine the whole wheat flour, oat flour and cornmeal and stir until well combined
- Add about half the flour mixture to the liquid mixture, stirring to blend
- Work in the remaining flour mixture until combined, turn out the dough out onto a lightly floured surface
- Knead the dough until it is smooth and elastic, about 8 minutes
- Place the dough into a large lightly oiled bowl, turning the dough to coat with oil
- Cover with plastic wrap or a clean dish towel and let rise in a warm place until doubled in size, about 1 hour
- Test dough by poking it with your finger
- Its ready if the indentation from your finger remains
- Lightly oil a large baking sheet and set aside
- Punch the dough down and turn it out onto a lightly floured surface
- Shape the dough into a round or long loaf and place it on the prepared baking sheet
- Cover with plastic wrap or a clean dish towel, set aside in a warm place and let rise again for about 1 hour
- Preheat oven to 375°F
- Uncover the dough and use a sharp knife to cut 3 diagonal slashes in the top of the loaf, about 1/4 inch deep
- Bake until golden brown, 40 to 45 minutes
- The bread is done if it sounds hollow when tapped on the bottom
- Cool on a wire rack for 30 minutes before slicing
