Ingredients
- chicken thighs, skin removed
- ¾ cup (195 g) low-salt salsa
- ½ cup (130 g) chunky peanut butter
- 1 tbsp (15 ml) low-salt soy sauce
- 2 tablespoons (28 ml) lime juice
- 1 tsp grated fresh ginger
- 1 tbsp (1 g) chopped cilantro
Method
- Put chicken in slow cooker
- In a bowl, mix together remaining ingredients except cilantro
- Cover and cook on low 8 to 9 hours or until chicken is cooked through but not dry
- Skim off any fat
- Remove chicken to a platter and serve topped with sauce
- Sprinkle with cilantro
- Yield: 6 servings
- Per serving: 67 g water; 195 calories (57% from fat, 28% from protein, 15% from carb)
