Tasty Carrot Lentils Soup Indian Recipe

Ingredients

  • Serves: 8
  • 1/2 cup lentils
  • 2 lbs carrots, peeled and cut into 1-inch pieces
  • 1/2 tsp harissa
  • 1/4 cup maple syrup
  • 1 cup orange juice
  • 4 cups vegetable broth
  • 1 tsp fresh ginger, grated
  • 1/2 tbsp ground cumin
  • 1/2 tbsp curry powder
  • 1 medium onion, peeled and chopped
  • pepper.
  • salt.

Method

  1. Add orange juice, broth, ginger, curry powder, onion, and carrots into the slow cooker and mix well.
  2. Cover and cook on low for 6 hours.
  3. Add lentils, harissa, and maple syrup.
  4. Stir well and cook on high for another 2 hours.
  5. Season with pepper and salt.
  6. Serve and enjoy.
