Ingredients
Makes 4 servings
- 8 ounces penne
- 1 1/2 cups red seedless grapes
- 1 cup green seedless grapes
- 1/4 cup chopped red onion
- 1 celery rib, minced
- 1/4 cup fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/3 cup olive oil
- 1 tablespoon minced fresh tarragon or 1 teaspoon dried
- 1/3 cup toasted slivered almonds
Method
- In a large pot of boiling salted water, cook the penne, stirring occasionally, until al dente, about 10minutes
- Drain well and rinse under cold water
- Transfer the pasta to a large bowl and add the red and green grapes, onion and celery
- Set aside
- In a small bowl, combine the lemon juice, salt and pepper
- Whisk in the olive oil until blended, then pour dressing over pasta
- Add the tarragon and almonds and toss gently to combine
- Serve chilled or at room temperature
